Just a quick post about my awesome dinner that I made tonight. This dinner looked so impressive with minimal effort. I made chicken piccata with browned Brussel sprouts and quinoa.
The chicken I made by putting in a plastic bag and covering with flour, salt and pepper. I then cooked it stove top in a little bit of olive oil until both sides were brown (about 5 minutes each side. Then I put the chicken into the oven at 350 degrees for 10-12 minutes while I made the sauce. In the same pan that I cooked the chicken, I added about 1/2 cup of dry white wine and boiled it until the liquid reduced by half. I then added 1/2 cup of chicken broth, 1/2 juice of a lemon and 2 tablespoons of capers. I simmered this until the chicken was done. I the. Added the chicken into the sauce and served it together!
For the Brussel sprouts, I cute the Brussel sprouts in half and put them in a pan with 2 tablespoons of olive oil and one tablespoon of butter. I also added 4 chopped garlic cloves and salt and pepper. I cooked the Brussel sprouts on medium low for about 20 minutes, only flipping them around once.
