“Burgers” and “fries”

Last night, my boyfriend and I just felt like a good old fashioned meal of burgers and fries while we watched Pulp Fiction(which was the first time that I had ever seen it). We just decided to do it a little differently. We made a little pit stop at my favorite place-Whole Foods-and grabbed some ground chicken, basil, red onions and sweet potatoes.
We decided to ditch the buns on the chicken burgers and just serve it over a bed of lettuce to make the meal a little lighter.

We cooked the onions on low with some olive oil and salt for about 25 minutes.
While the onions cooked we made the sweet potato fries.
The chicken burgers were incredibly easy to put together. I just formed the ground chicken into two patties and sprinkled salt and pepper on both sides. I then cooked the patties in olive oil for about 5 minutes on each side.
When the patties were done, I put them over a bed of mixed greens with the onions and spread some homemade pesto on top.
Homemade pesto is super simple to make as well: just put one clove of garlic, a bunch of basil, 1/2 cup of olive oil, and 1/4 cup of Parmesan in a food processor.
We did!
